Are you needing some inspiration for what to make for dinner this week? Here are 5 low carb-recipes that should be added to your repertoire immediately. They are all dairy-free, gluten-free, and low-carb slash keto-friendly.
It’s the age old question: what the heck do I make for dinner? In our house, that question is compounded because I have to factor in the recipe needing to be dairy-free, low carb, and appeal to my children (which is basically impossible).
So when I come across a recipe that satisfies at least two of the three (my children are truly a lost cause, what can I say), I bookmark that recipe and make it over and over again. And even though my kids, who are the absolute pickiest eaters on the planet, don’t love these dishes, they will actually eat them. That’s probably as good as it’s going to get around here.
Also, if you’re looking for some already done menu plans or blank menu planners to make your meal planning tasks easier, I have a bunch of free resources available under the COOKING tab (see: This Week’s Eats and Menu Planners). I also have a series called food+fun where we came up with theme based menus for the kids to expand their palettes.
5 low-carb (and dairy-free) recipes to make this week.
These 5 low-carb (and dairy-free) recipes — featuring chicken or beef — are in our current rotation and make my taste buds happy every single time.
- Buffalo Chicken Meatballs from Made With Lev
There is just something so perfect about meatballs when trying to eat low-carb. They are easy to make, easy to eat, and don’t require any kind of bun or wrap to enjoy. I’ve made these with both ground turkey and chicken, and have to say that chicken is our favorite. So much so, that this has been a staple in our house for yearsssss. The kids even liked them (minus the buffalo sauce) in the beginning. Now, it’s just the husband and I. Oh well, more for us. - Easy Keto Cashew Chicken from Stylish Cravings
The husband and I were hooked from our very first bite of this one. I swapped out the liquid aminos and used tamari instead, since that’s what we prefer (and have on hand) and reduced the spice to 1 tsp of the chili garlic sauce since I was trying to cater to my family’s preferences. Feel free to use what makes your tastebuds (and ancestors) happy. - Oven Baked Chicken Wings from Wholesome Yum
This recipe and cooking method for chicken wings is a new obsession. I’ve tried making wings in the air fryer with a variety of different toppings and I have to say that this recipe is my absolute favorite. As much as I love buffalo sauce on my chicken wings (and on things in general), it can be super messy. Sometimes a girl just wants to enjoy something without it being a complete and utter mess. And by sometimes, I mean all the time. And by a girl, I totally mean me. I actually keep a homemade seasoned salt blend on hand now so that I can just shake it on my wings and call it a day. - 15-Minute Skillet Pepper Steak from PureWow
Easy, delicious, and made with ingredients we always have on hand? YES, PLEASE. This recipe calls for 3 main ingredients (beef, bell peppers, onions) and another 3 for the sauce (soy sauce or tamari, rice vinegar, red pepper flakes). The best part? It’s done in 15 minutes, making it an easy week-night win when it comes to menu planning. - Mini Muffin Tin Meatloaf from The Diary of a Real Housewife
We love meatloaf in the House of Lev. It’s on of the very few meals we can all agree upon. The only problem with regular meatloaf is that it takes 1.5 hours to make. Something I am generally not capable of most nights. Enter mini meatloafs into the mix and you’ve got the best of both worlds: meatloaf that’s quick and easy to make. To make this one low-carb, simply omit the sauce (¼ cup of ketchup, 1/4 cup brown sugar, 2 tsp mustard) or swap out the regular brown sugar for a zero-sugar alternative like Swerve Brown Sugar Replacement (affiliate link).
